Hi guys - I just wanted to let you know that I've started a new blog where I'm posting new P90x recipes every day. It's at www.myp90xnutritionplan.com. (I'm not a coach - it's an informational site only.) I was coming up with new recipes while I managed my hubby's nutrition, and I figured other P90xers would be interested!

Mashed Cauliflower

Steem a head of cauliflower and then mash it like you would for mashed potatos. Add a little butter and/or cream (I used vegan butter and non-dairy creamer because my son has dairy allergies), and some salt and pepper. Yummy!

I am a total ice cream junky! My biggest tempation is a yummy bowl of ice cream. So of coarse I always try to find a way to excuse my bad habbit. Here's my recipe.

Psuedo Chocolate Milkshake
1 scoop of chocolate protein powder
1/2 cup of non fat vanilla frozen yogurt
1/4 cup of vanilla flavored almond milk


This counts as:
1 Protein
1 Snack
I don't count the almond milk because it's only about 10 calories and basically no carbs.

I just made something VERY similar... beet and veg soup is definitely where it's at
I'm only in stage one and all I did was this (I'm a vegetarian):

3 Beets
3 Shallots
2 Cloves garlic chopped
1 Carrot
4 Tsp fresh ginger grated
1/2 tsp of veg oil
3/4 low sodium veg broth
1 Bay leaf
2 tsp dried tarragon
2 sprigs chopped fresh rosemary
2 tsp ground cayenne
2 tsp ground cinnamon
Handful of fresh dill chopped
lots of pepper

Brown shallots, garlic, and ginger with 1/2 tsp of veg. oil. Add carrots and let steam for 5 minutes. Add beets and cook/steam together for 7-9 minutes (until soft). Add vegetable broth and let simmer for 20 minutes. Add all spices and herbs (except dill). Allow to cook for another 5 minutes. With an immersion hand blender blend the soup until it is as smooth as you can make it.
Add the dill & serve.

It was a perfect soup for a cold winter day!

I hope you like my version too... Unfortunately, I have no idea what the Nutrition facts are but I'm thinking it shouldn't be too bad considering I really didn't add anything other than the broth.

Mexican Chicken

1-1.5 pounds of boneless, skinless chicken breasts
1 16oz. jar of salsa (I use On The Border mild)

Thaw chicken and place in crock pot. Pour salsa on top. Cook on low 4 hours or until it pulls apart easily with two forks. Take chicken out and shred with two forks. Place chicken back in the crock pot and stir to incorporate the salsa. Replace lid and turn crock pot off. Let sit for 30 minutes or so to absorb the juices. That's it! Super easy and very good.

You can eat it as is or dress it up however you like. I like to put it on a low carb tortilla with red and green peppers, onions, and a little low fat cheese.

You can also try putting the chicken in frozen and cook for longer. I'm not sure how long that method would take though.
